Ingredients

  • 1/2 cup fresh aloe vera gel
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Prepare the fresh aloe vera gel by washing an aloe vera leaf thoroughly and draining the yellowish sap (aloin) by allowing it to drain vertically in a bow for a few minutes; peel the leaf by laying it flat on a cutting board, then use a knife to slice off the serrated edges along both sides of the leaf and make a lengthwise incision along one side of the leaf, being careful not to pierce through the entire thickness of the leaf. Extract the gel with a spoon after gently opening the leaf to reveal the gel-filled interior.
  2. Combine the fresh aloe vera gel, olive oil, lemon juice, honey or maple syrup, salt, and pepper in a blender or food processor.
  3. Blend until smooth and creamy.
  4. Taste and adjust the seasoning as needed, adding more lemon juice, honey, salt, or pepper to suit your preferences.
  5. Drizzle over salads and toss just before serving. Can be stored in an airtight container in the refrigerator for up to one week.
